Apple & cabbage slaw
Crunchy cabbage, apple and carrot make a fresh side for a warm meal. Yogurt and mustard provide a light coating without hiding the texture of the vegetables.

Step 1
Slice the cabbage very finely and grate the carrot. Cut the apple into matchsticks, removing the core.

Mix yogurt, lemon juice, mustard and salt in a large bowl. Add the vegetables and apple.

Toss until evenly coated. Scatter with walnuts and serve, or chill briefly until needed.

- Use a sharp knife for thin cabbage slices; thick pieces are harder to dress evenly.
Keeping the leftovers
Refrigerate promptly. Keep dressing and fresh toppings separate where possible; use within 2 days. Add avocado or delicate leaves just before serving.
