Paprika fish & potato tray bake

Potatoes start roasting before white fish joins the tray, so both can finish together. Paprika and lemon add flavor with a short list of everyday ingredients.

    Step 1

    Heat oven to 220°C / 425°F (200°C fan). Toss potatoes and pepper with half the oil, half the paprika and half the salt. Roast 20 minutes.

    Step 2

    Rub fish with remaining oil, paprika, salt and black pepper. Add to the tray and roast another 12–15 minutes.

    Step 3

    Check fish reaches 63°C / 145°F and potatoes are tender. Remove fish if ready before the vegetables. Finish with lemon juice.

  • Cut potatoes into 1 cm cubes; large pieces need a longer head start.

Keeping the leftovers

Refrigerate in shallow covered containers within 2 hours. Use within 3 days and reheat until steaming hot throughout; reheated leftovers should reach 74°C / 165°F.
